Fregula or Fregola, is a semolina pasta with Sardinian roots, that has a nutty flavor that is developed in the manufacturing of the pasta. The pasta or semolina dough, is rolled in the hand whilst slight amounts of water is added to form the small bead like pearls of pasta. Once formed, the pasta beads are then roasted to perfection to create the nutty color and flavor that Fregula is known for. It is for all intents and purposes difficult to find, unless you find an online source, or find it at a specialty gourmet shop. It is prepared and eaten in various ways, from tomato based Italian sauces, to cold salads or warm salads alike. I have yet to try this pasta, but thought that it would be a great idea to introduce some readers to this amazing little secret jewel of a pasta.
